Episode #103: Helix Brewing Co.

This week we meet a young owner and brewer with a very supportive family.  We interview Cameron Ball of Helix Brewing Co.  We are also joined by the newly hired assistant brewer Michael which will help Cameron with having to not do so much by himself.

Interview

After getting though their first craft beers, Cameron gets going into his homebrewing history, engineering background, and building the brewery.  We happen to be sitting next to his barrels so Brian’s interest is peaked.  Cameron talks about his barrels and future sour releases.  Like Societe, they aren’t 100% sure when the sours will be released, but they hope soon.  When they do release, you’ll have to keep watching their social media.  We delve into their brewing practices, how their brewery is built out, and their distribution, or lack thereof.  Since Michael was fairly quiet we wanted to see what his brewing history was like.

After a break, we come back and talk about their most popular beers which includes a rotating DIPA in which four DIPAs will come out throughout the year.  We find out about what the heck the “Cameron Switch” is.  We find out also what they want the Helix experience to be.  Part of that is their Tuesday $10 All-You-Can-Eat taco night.  Can you beat the record of 21 tacos?  Next up we move onto our news.

  • San Diego Beer Works is now Bottle Craft Solana Beach – 437 S Highway 101 in Solana Beach
  • Coronado Brewing to construct new facility in Imperial Beach – part of the Bikeway Village project – Their plan is to install a full-service restaurant and 10-barrel brewery in the immediate future, then follow that up down the road with a distillery. The restaurant will come in around 7,000-square-feet and include outdoor space that will be outfitted with seating and fire-pits. A temporary tasting room will be constructed this summer.

Episode #102: O’Sullivan Bros. Brewing

It was not planned, but our 102nd episode features the brewery that Kyle Wiskerchen used to work at before Division 23.  We are recording this episode with Ed O’Sullivan from his name sake, O’Sullivan Bros. Brewing.  We were very surprised and excited to learn that Ed and his crew are very scientific focused and don’t brew your standard San Diego style beers.

Interview

Seeing how Ed’s namesake is in the brewery name, we ask him where he got his knowledge from.  He went through one of the first UCSD Extension program for brewing.  He is now also an instructor with that program.  Ed moves into talking about his brewhouse.  He ended up getting it from Brewmation which partners with Stout Tanks and Kettles.  We find out that they brew mainly malty beers, but there is an IPA on tap.  Ed talks about the ownership structure of the brewery and all his brothers (and sister.)  Before the show we saw he has a lab so Brian is very interested in how he treats his water.  From there Ed talks about the rest of the equipment in the lab which starts with the ability to do yeast cell counts.  Another surprising aspect of the brewery, is they foam down the brewery every 30 days with acid to wash the breweries.  Finally, the lab helps they tracks the gravity of the beers and they plot it for reference.

After a break we come back some listener beer and a talk about the Reinheitsgebot and how O’Sullivan Bros. follows it.  We move into a listener question from Hauck Architecture about why the brew English style beers.  We then get into our news and other topics.

  • Horus Aged Ales to open –  The brewery will only be selling barrel-aged beers.  Only about 150 to 650 total 750-milliliter bottles per-batch.  Horus’ 1st beer, a sour ale, to debut at Bine & Vine. (4040 Calle Platino, Suite 120, Oceanside)
  • O’Sullivan Bros. Brewing is doing a St. Patrick’s Day celebration and Irish Kilt Contest.  No tickets, the event info can be found on the Facebook event page.

Episode #101: Division 23 Brewing

Are you ready for the first show of the next 100?  We are recording over at Division 23 in this episode to find out what it is like running a brewery in the crowded area of Beeramar, right next to Ballast Point BTW.  We are joined by Allen Hampton and Kellen Smith, both co-owners, and Kyle Wiskerchen the head brewer.

Interview

What does Division 23 mean?  Kellen answers that question which does lead into some talk about the day jobs Allen and Kellen do to support the brewery.  They talk about the lovely job of selling and installing HVAC systems, but we do eventually start talking about the beer.  We ask them how they got into craft beer and ask the usually question about their gateway beer.  We get into Kyle’s history with brewing as well.  Kyle goes into how he was able to work with Kevin Dougherty (now with Cutwater Spirits) for a little bit and how he has taken his recipes and made some of them his own.  Kyle also talks a little bit about the pain in the butt that Who’s the Boss triple IPA was the nit was brewed.  The guys were nice enough to save what was left of the keg of their Sour Superintendent Berliner since they knew Beagle and I are big fans.

We take a short break and come back with some beers gifted by listener therealmatatat.  We always welcome listener beers on the show!  We also have a beer from Beer Lab Hawaii that was sent over to Division 23.  We discuss their most popular beer, spoiler alert…it might be an IPA.  We get into the few news topics and then ask the guys what has been their best moments since opening.

Episode #100: Tackle Hugs Bring All the Boys to the Yard

We made it to episode 100!  Since this is 100, we made sure it was filled with past guests.  We are first joined by Brian Mitchell from Pariah Brewing.  He talks about how it is being just about a week old.  Brian talks more about how Beagle helped build the tasting room and how Beagle has his own chair.  After Mitchell leaves us, we are joined by Mike Maass and Shannon Lynnette from Burning Beard Brewing.  We get the exclusive announcement of their 1st anniversary party coming up on April 1st.  Beagle asked them about heir favorite moment since opening up.  Then we ask Shannon why she is co awesome.  We take a short break and come back with the news and some more special guests.

After the news we are joined by Alex Van Horne from Intergalactic Brewing, Ian Cheesman from West Coaster, and Will Keizer from Premier Stainless.  We get the scoop on Intergalactic’s anniversary, also coming up in April.  Alex has worked out four collaborations with other breweries for the party.  Also he released a little bit of information on some new cans he wants to come out with.  It’s possibly a direct draw into the cans, but there’s still a lot to figure out.  I bring up buying into the Craft Coalition with the San Diego Brewers Guild.  That moves into a conversation about the new regulations for breweries that have “pop-up tent” food vendors or catering companies.  We talk to Will and find out he has some cool new projects coming up, however since most of it is under NDA, we mainly find out breweries all over the world are buying from Premiere.  Luckily Ian doesn’t sign NDA’s for West Coaster so he lets us know about an article he is doing on gluten reduced and gluten free beers.

Episode #99: Pariah Brewing Co. w/ Special Guest San Diego Brewing Co.

NEW BREWERY ALERT AGAIN!  This time it really is a brand new brewery.  We are recording at the grand opening of Pariah Brewing Co.  If you’ve been listening to the show for a while you know this brewery is a long time coming.  Brain Mitchell, the owner and head brewer, has been on the show many times and we are stoked to see his dream of owning a brewery come true.  Before we get into the interview, we delve into the news as to let brewer Brian enjoy his Grand Opening as the first patrons come through the door.  We’ll be sure to get back to Brian in a bit.

Interview

After a break from the news we are joined by Brian Mitchell.  We discuss his beers that are on tap right now:

  • Off White Wit – Belgian-style white beer brewed with honey, Jasmine green tea, lemongrass, orange slices and ginger.
  • Dorcha Extra Stout – This take on a foreign extra stout is a rich and decedent brew overflowing with aromas and flavors of coffee, dark fruits, licorice, tobacco and bitter chocolate. We use a proprietary locally roasted coffee, molasses and super awesome organic, fair trade, cocoa nibs.
  • Dank Drank IPA – Hop-bursted west coast India pale ale.
  • Drupe Fruit IPA – West coast India pale ale brewed with mango flesh, peach flesh and hemp oil.
  • Erotic City – Ale brewed with muscat grape, honey and grains of paradise.
  • Uni Stout – Winter seasonal stout brewed with San Diego sea urchin uni, lactose and sea salt – served on nitro.

Brian also talks about opening the brewery finally and how he can now let his team of talented people take the reigns and make sure his beers get out to the right people.  Brian also gave Beagle a nice surprise for all the hard work he has done.

After another break we come back with a special guest, Jeff Drum from San Diego Brewing Co.  We figured since there’s a brewery next door, let’s get another interview in the show.  Jeff talks about his experience so far at CRAFT and how their new tasting room and brewery is helping them re-ignite their brand in this more mature craft beer scene.  We ask Jeff about some of his beers and something you don’t see everyday, kombucha.  We take one last break and we finish out the show.
