This week we are joined by Steve Garcia from Thr3e Punk Ales.  They are in a holding pattern right now as they build out their Chula Vista brewery and tasting room.

Interview

We start with asking why Steve and the other Punks, John Marshall & Kevin Lewis, named the brewery Thr3e Punks.  We’ll get to more of the “punk” aspect of it later in the show.  Moving onto the area of San Diego where they will be at, Chula Vista.  Steve talks more on why Chula Vista and South Bay is important to him and why he chose there versus North Park, or other brewery hot spots in San Diego.  During that conversation we find out the building was a Men’s Warehouse and that leads into some issues during the build out.  Moving on in the Chula Vista conversation, Brian brings up the #SouthBayUprising hash tag.  Some great South Bay breweries and companies are banding together to build a positive message about South Bay and being a destination for craft beer.  That leads into talk about the South Bay Craft Beer Brewers Guild.  Seeing how both Brian and I spent a lot of our life in South Bay, for different reasons, this talk about Chula Vista turns into a side conversation about Eastlake and construction talk.  Getting back on track, we delve into how and why Thr3e Punk Ales wanted to collaborate with bands.

We take a break and come back to Brian talking about what his thoughts are on opening a brewery.  After some talking about how the culture is in San Diego opening a brewery, we move onto In the News!

Episode #75: 32 North Brewing Co.

We go to 32 North Brewing Co. which has been a brewery with some ups and downs.  They’ve been through a few brewers which caused them to produce beers that wowed people, but also beers that didn’t.  They made a huge move by hiring not one, but two people from Fall Brewing, Mike Mellow to lead their sales and Nick Ceniceros as their head brewer.  We talk with both of them and the owner of 32 North, Steve Peterson.

Interview

We start at the basics and ask where they started their beer journey.  That leads into a talk about the brewing culture here in San Diego.  Then Nick says something we are not sure he was supposed to, 32 North will be releasing beers in cans!  Nick continues his transition into 32 North and how he is taking his head brewer job very seriously.  We ask Nick how is it coming into a brewery where other brewers had already been brewing.  Nick shows his experience in how organized it sounds like he made he process for him and his assistant brewers.  We then ask Mike how it is coming in as a new sales person.  Somehow we talk about licking Nick and find out how Nick loves spooning valves.  We real it back in and talk about their new Liberty Station tasting room.  We learn there is a beer pairing dinner over at Quad Alehouse on October 31st, no wait August 31st, nope it’s actually on September 1st.

We took a break and when we come back we talk about the Roes Red form Pure Project.  Thank you Pure for letting try this beer early!  Steve makes the correction about the beer paring dinner with Quad and we find out there is another beer paring diner with Common Theory on August 31st.  Since we were talking about placed like Quad and Common Theory, we ask Mike what it is like today to sell beer compared to when he started many years ago.  After long conversation about #IndieBeer, we move onto voicemail and news!

Episode #74: Finest Made Ales

East County has had its share of strange happenings in the San Diego beer scene.  Breweries that closed temporarily, closed permanently, and now a brewery that has rebranded itself completely.  We interview Finest Made Ales to see why the name Butcher’s is going away and Finest Made is taking over.  We are lucky to have the owner and head brewer Rey Knight, the managing director Jim Serbia, and their sales ambassador Randy Lewis.

Interview

Rey gets into where his love of beer started.  We find out his history as a chef and why he had the idea of beer and charcuterie.  This love of beer and food started as Butcher’s Brewing, however it was a still a very small brewery with homebrewer written all over it.  The crew then delves into the change from Butcher’s to Finest Made and how it is have to sell a new brand when people have been familiar with the “pig.”  Randy talks more on selling the beer and what he does to make sure the beer is served properly on a bar’s draft system.

We take a short break and come back with Beagle drinking their hoppy pilsner so Rey talks a little about how it is made.  Maybe we found what Beagle’s next calling is, a beer buyer for some bar or restaurant.  We talk most about how Finest Made will eventually have beer and food pairings, dinner, or brunches.  That moves the conversation into having a brewery that has the community tables, larger wooden benches versus small tables.  We then move into the news.

Episode #72: Setting Sun Sake Brewing Co.

As we have learned over the last 70 episodes, San Diego is not only home to amazing independent beer, but also amazing independent spirits.  Now we have amazing independent sake coming very soon!  We interview Josh Hembree and Keldon Premuda from Setting Sun Sake Brewing Co. and talk all about why Sake is their life and why they chose to open in a craft beer city.  Is Sake craft beer, or is it something else?

Interview

Like I said above, we start the conversation about why Josh and Keldon decided to open up a craft sake brewery versus a regular brewery.  Josh has some brewing experience but didn’t have the best first batch, luckily he has spent over three years perfecting his recipes and brewing procedures.  We move into the entire brewing process for sake, while similar to brewing beer, there are differences due to using rice and koji in place of malt and yeast, even though Setting Sun also uses yeast.  There are still some unknowns about craft sake and all the variations they plan on releasing, dry-hopped, brown rice, jasmine rice, rauch sake, and fruited sake.  We ask how many craft sake breweries are in the US.  After a short break, we come back and ask about Beeramar and why they chose their location.  We delve into their distribution model and how they will be serving their sake in their tasting room.  That flows into talking about collaborations with breweries.
