Episode #41: Green Flash Cellar 3

GFCellar3

(NSFW)

Hey Sours and Barrel Heads, you will love this awesome episode!  We talk with Jesse Smith and Dave Adams from Green Flash about Cellar 3 and the barrel-aged and funky beers they brew.

Interview:

Jesse is the Green Flash Cellar 3 Tasting Room Manager and Certified Cicerone, (or is it a Certified Chicharrón?) and Dave is the Director of Beer Education and Certified Cicerone.  We talk to the both of them about what Cellar 3 is and why it is a separate building.  They do things like have bands play in the barrel area, they have artist show their artwork on the walls, and an improv group performance.  They also do the Holiday Marketplace on December 12th where they invite people to showcase their holiday craft creations and sell them.  During this marketplaces, Green Flash will release their newest Cellar 3 beer, Natura Morta Cherry!

We talk a little about wood spirals versus wood chips.  You might remember the Green Flash restaurant in Pacific Beach, they explain how that relationship was.  Jesse talks about how Cellar 3 gets their beer from Mira Mesa to Poway in 550 gallon totes and how their use their foeders.   We also mention Chuck Silva and how Green Flash is dealing with Chuck leaving the company.  Luckily Green flash has Erik Jensen to take over the reins.  Dave gives an insight on how Erik and Chuck have some history together and the interesting twist of how close-knit the San Diego beer industry can be.

Questions from Fans!

Paul Maguire – San Diego Hop Addict – Can we expect any fun fruit variants of Blanc tarte barrique in the future?

Michael De Hootch – Beer Alien & Adam Veith – @NotTheFakeAFV – Will there be a Cellar 3-like room in Virginia?  Also will there be Alpine Beer there?

Mike and Sara – A Pint of Hoppiness@PintofHoppiness – Is there anywhere in town you can find aged or vintage GF releases like Barleywine, Rayon Vert, etc?

Jake Collins – Intergalactic Brewing@jakewilliamcollinsthefirst – What’s the most expensive barrel they’ve bought?  Do they ever try the wine/whiskey/whatever was in the barrel before they buy said barrel?

Episode #40: Slater’s 50/50

Slaters5050

(NSFW)

Guess what?  Thanks to some HUGE news this week, you get two episodes this week.  We interview Scott Slater and Mark Schultz from Slater’s 50/50.

Interview:

We first talk to Scott Slater about how Slater’s started up in Anaheim and how it came down to San Diego.  The leads us to talk about their craft beer program and talk to Mark Schultz who is officially known as the Beer Monger.   There are over 500 taps in their six locations.  For those who don’t know about Slater’s 50/50, their signature burger is 50% beef and 50% bacon.  And of course they add in more bacon on it.  Most of their dishes have bacon somewhere in them.

We then talk about their other restaurant S&M Sausage & Meat in “University North-Crest”.  We test Mark as the Beer Monger to pick Brian a beer.  Back to the burgers, we ask Scott if how he comes up with new burgers and if he has an employee burger competition.  And there something about a foie gras burger.  We also talk about the amazing care they take with their beer lines and the beer servers.  Every “front house” staff must at least be Cicerone Certified Beer Server.

We asked some listener questions.  Would you serve craft Sake?  What happened to the 50 Alarm Burger?  Is it coming back?  Would you stop selling beer from “corporate” beer?

Into the News:

Ballast Point sells to Constellation Brands for $1 Billion.  Constellation owns brands like Modelo, Corona, Pacifico.  AB InBev does own Constellation currently.  It is possible they will need to sell Constellation if AB InBev buys MillerCoors.  A sad, sad day in San Diego craft beer history.  More about this from a few sources:  West Coaster & Brew Bound.

What’s Tappening

We talk about our past week (or so) of drinking.

I Do Declare!

Congratulations to all the organizers of the San Diego Homebrew Festival and Competition.  It was their first year and the event went great!  A little rain at the end, but it was a beautiful say in the America’s Finest City.  There was some great homebrew and professional beer flowing.  Everyone needs to go next year!

Episode #38: Guild Fest VIP Brewer Takeover – San Diego Beer Week

SDBW_VIP_GuildFest

(NSFW)

We were invited by the San Diego Brewers Guild to do a show during the VIP Brewers Takeover.  We are very happy the Brewers Guild let us come and record during the festival.  As with any festival, there is a lot of crowd noise and music going on in the background.  Our recording area was right in the thick of it all and the music stage was a mere 300 feet away.  Please excuse the noise in this episode.  We talked a little bit about current news and interviewed a few friends while we were there.  We also answer the question from last’s weeks voicemail from Constantine about how a brewery should choose a distributor.

Into the News:

The owners of The Cork and Craft recently announced that they will undergo a $1 million expansion of the restaurant.  This will include Abnormal Beer Company and Abnormal Wine Company.  Article by the West Coaster.

Indian Joe Brewing is re-opening in Vista.  It will be two stories and coming in at 18,000 square feet. This will allow for the installation of a 15-barrel brewing system from Premier Stainless.  Article by the West Coaster.

Episode #37: We drink lots of Tioga-Sequoia

Tioga-Sequoia

(NSFW)

Remember when I went up to Fresno to visit the guys from The Perfect Pour?  This is the fruits of my labor.  We go through nine beers from Tioga-Sequoia and talk about them without knowing anything about them other than their style.

This week we have an all-star cast of brewers and beer geeks.  We have the usual cast of Brian Beagle and Greg Homyak and are joined by Brian Mitchell, our friend who happens to be professional brewer, Daniel Cady, head brewer of Twisted Manzanita Ales, and Travis Hudson from Brown Bag Beverage.  We blind taste test nine beers from Tioga-Sequoia.  While I know the beers, the rest of the panel does not and they give their honest feedback on what we drank.  In addition you will hear us talk about the news, What’s Tappening, and a few voicemails.

For you reference the beers we drank are:

  • General Sherman IPA
  • DDH (Double Dry-Hopped) General Sherman
  • Tecumseh Imperial IPA
  • TDH (Triple Dry-Hopped w/Mosaic) General Sherman
  • Firefall Red Ale
  • Sugar Pine Cocoa Vanilla Porter
  • Mocha Midnight Imperial Stout
  • Midnight Lightning Imperial Stout
  • Piece of Cake Dessert Stout

We get into some brewing tips, both professional and homebrewing.  The blind tasting allows us to talk truthfully about the beers, good and bad.  The pro brewers give their feedback on either why the beer is tasting the way it is or possible ways they could mitigate those flavors if those flavors were not intended.  We greatly appreciate the beer from The Perfect Pour and Matt from Tioga-Sequoia, we had ton a of fun with this episode.

Into the News:

Judge Tentatively Dismisses Blue Moon Suit.  Evan Parent had argued that MillerCoors tricked consumers into paying more for a craft beer by slapping a Blue Moon Brewing label on their packages. There’s only one problem — there is no legal definition of craft beer.  Article from BrewBound.com.

Rip Current has their first bottle release – Bourbon Barrel-Aged Black Lagoon.  Bottles are still on sale here.  (As of 11/2/15)

The Brew Project has opened their new restaurant, craft beer bar, and bottle shop in Hillcrest!  Article from the West Coaster.

What’s Tappening

We talk about our past week (or so) of drinking.
